In the sun drenched heart of Provence, at the start of the harvest season, Francois Doucet visits the local farms and reserves the very best crops for his ingredients. Featuring recipes that have been passed down through four generations, Doucet captures the tastes of summer with his mouth watering confections.

The basis of these traditional Pate de Fruits Glace is found in the apricots ‘orange de Provence’ which are grown on the high dry plateaus of the region. Blended with pear, strawberry, mandarin and raspberry … and definitely no preservatives … they present a dazzling array of colourful pates that burst with the flavours of natural fruit.
